When we got back from our last trip to Vermont, I noticed that there were many odd socks lying around the place. Not unusual as the kids seem to think that they can take their socks off and leave them anywhere. But then I noticed that these were CLEAN odd socks....I have now worked it out. One of the cats (and I have my suspicions) is "catching" socks. She is fishing the sock out of the basket and "killing" it. I really have been finding them ALL over the house. I'm pretty sure that this is the same cat who likes to sleep in Honey the dog's crate. Her crate is only just big enough for her (at a squeeze) and the other night, Honey got put in there with Leila the cat by accident all night. Crazy cats.

I noticed this morning that Ella has nearly caught up with Kit in height again. A few years ago they were nearly the same height-well Ella's legs were the same length as Kit's even though she was a good 3 inches shorter-and that's what's happened again. That girl grows in her legs. And a few years ago Kit was nearly the same height as Remi, but now Rem's shot up and Kit's just stayed the same. It's like leapfrog growing...

My favourite treat for breakfast...toasted banana cake with a dollop of plain yoghurt and a drizzle of honey. This wonderful food I discovered at a cafe near where we lived last time in Sydney (in Lindfield). So yummy. And if you are like me and collect and freeze all those bananas that are just a bit too past it for the kids to eat then bake up batches of banana cake (I have an awesome recipe if anyone is interested)-adding of course extra bran and flax seed etc, then cut it up and freeze it for putting into kids' lunch boxes, then it's no trouble to whip it out of the freezer, and toast it for breakfast. Super wonderful, especially with a cuppa coffee.
yes please to the bannana cake recipe Aunty Georgia....i do have one but love to try other peoplestried and true's...i put pecans in mine as i love pecans ....instead of walnuts..plus i sending you a recipe for a chicken lasagne that is easy as... and everyone thinks you have been baking for hours...

1 large BBQ chicken (stripped of it bones and broken into small peices...(i take off the skin(fattening) but you might like to leave it on)
1 can of crushed italian tomatoes
1 can of sliced mushrooms (drained)
1 onion chopped and fried in a little butter
1cup of shredded ham or bacon(cook the bacon in with the oinons)
salt and pepper to taste
mabye some chopped fresh basilor any italian herb to taste
1 large tub of sour cream
2-3 cups of your favorite shredded tasty cheese
1 cup of parmesan cheese(if the kids like it that is)
1 packet of lasagne sheets (if they are the store bought hard ones i soak mine in hot water while i am getting the rest of the ingredients ready)
in a small bowl mix mushrooms, tomatoes,oinion and bacon, sour cream(saving maybe a good half a cup to spread on the top for the last layer), herbs to taste,salt and pepper.
Prepare Lasagne dish by spraying lightly with oil
Layer with lasgne sheet then chicken and then spoon over the creamy mixture ...then sprinkle with the tasty cheese.
Keep layering till you have used the mixture
Lastly spread the cream and then sprinkle with tasty cheese and top with the parmesan..sometimes i pour a little cream(about 1/2 cup) over the top as well...decadent i know and not good for the diet...
Cover with foil and bake in the oven for about 20 - 30 mins removing foil and turning the oven up to 200 to brown the top...
A sure winner...
Oh if the kids dont like mushrooms just substitute for something they do like... zuchini,grilled eggplant,spinach, baked pumkin and and lentils...etc etc...Have fun with it and enjoy the time you save in the kitchen...Nettie XXX
